Instructions

👩🏻‍🍳 Preparation Steps for Traditional Azerbaijani Village Giant Burger:

1. In a large bowl, combine the bread flour, yeast, salt, and sugar.
2. Gradually add the warm water, milk, eggs, and sunflower oil, kneading until a smooth, elastic dough forms.
3. Cover the dough and let it rise in a warm place for 60 minutes or until doubled in size.
4. For the roasted sauce, slice the tomatoes, carrots, and one onion, place them on a tray with sunflower oil, and roast at 200°C for 25 minutes before pureeing until smooth.
5. Prepare the meat mixture by combining the finely chopped beef with grated onions, salt, black pepper, paprika, and turmeric, kneading well to ensure it holds its shape.
6. Shape the dough into one massive circular loaf, brush with egg yolks, sprinkle with sesame seeds, and bake at 180°C for 40-50 minutes until golden brown and hollow-sounding.
7. Shape the meat into one large circular patty slightly wider than the bun and grill over medium-high heat until fully cooked through.
8. Prepare the creamy cheese sauce by melting butter in a pan, whisking in flour to create a roux, and gradually adding milk while stirring until thickened; stir in the grated cheese until melted.
9. Peel and cut the potatoes into strips, toss with a light coating of flour, and deep fry until crispy and golden.
10. Cut the giant bun in half horizontally and spread a generous layer of the roasted tomato sauce on the bottom half.
11. Layer the assembly starting with lettuce leaves, the grilled beef patty, the creamy cheese sauce, sliced cucumbers, sliced fresh tomatoes, and the crispy fries.
12. Place the top bun over the layers and press down slightly before slicing into wedges to serve.
