Instructions

1. Place the dried tulip petals and 100 g of the granulated sugar into a large wooden mortar and grind them with a pestle until you achieve a fine, vibrant pink floral sugar powder.
2. In a heavy-bottomed saucepan, combine the remaining 400 g of sugar, water, and lemon juice.
3. Heat the mixture over medium heat, stirring gently until the sugar dissolves.
4. Once dissolved, stop stirring and increase the heat. Boil the syrup until it reaches the "hard-crack" stage, which is precisely 150°C.
5. Immediately stir in the prepared tulip-sugar powder to infuse the syrup with color and floral essence.
6. Prepare your spinning mechanism (as shown in the video, a custom-built centrifuge) and ensure the basin is clean and dry.
7. While the syrup is hot and liquid, carefully pour a steady stream into the center of the spinning head.
8. As the centrifugal force extrudes the sugar through the fine holes, use a long wooden skewer or bamboo stick to catch the threads.
9. Rotate the skewer in a circular motion around the basin to gather the "wool" into a large, fluffy cloud.
10. Serve immediately while the texture is light and crisp.
