🍒 500 g sour cherries
🍏 300 g green plums
🍇 300 g black mulberries

Instructions

1. Clean the fruit thoroughly, removing stems from the sour cherries, green plums, and black mulberries.
2. Place the black mulberries and sour cherries in a clean cheesecloth bag, then firmly roll or press to extract all the deep red juice into a large container.
3. Transfer the extracted fruit juice into a large pot, then add the green plums, whole garlic cloves, whole green and yellow chili peppers, sea salt, black peppercorns, crushed red pepper flakes, ground coriander, and ground cumin.
4. Bring the liquid mixture to a gentle simmer for 15 minutes to infuse the spices, then remove from heat and let it cool completely.
5. Deeply score the beef roast across the surface in a diamond pattern, making incisions about 2 centimeters deep.
6. Stuff the fresh rosemary and thyme sprigs securely into the cuts made in the meat.
7. Submerge the seasoned beef roast completely into the cooled spiced fruit marinade and let it marinate in the refrigerator for at least 12 hours.
8. Preheat your home oven to 140 degrees Celsius.
9. Remove the beef from the marinade, place it on a roasting rack set inside a large baking pan, and pour a thin layer of the strained marinade liquid into the bottom of the pan.
10. Cover the roasting pan tightly with heavy-duty aluminum foil and bake for 4 to 5 hours until the meat is completely tender and pulls away easily from the bone.
11. Remove the foil during the last 30 minutes of cooking, increasing the temperature to 200 degrees Celsius to achieve a beautifully charred, caramelized exterior glaze.

1. Thoroughly wash all the fresh fruits under cold running water.
2. Slice the red apples, green apples, and pears into uniform, thin rounds.
3. Slice the lemon into thin wheels, removing any seeds.
4. Place the apple slices, pear slices, sweet cherries, and strawberries into a large teapot or traditional samovar core.
5. Pour two liters of boiling water over the fruit mixture.
6. Allow the tea to steep over a low heat source for 20 minutes to fully draw out the natural sweetness and flavors of the fruits.
7. Stir in the fresh lemon slices and honey just before serving hot.
